South Texas meets South Korea. Lance Eaker’s dream of owning a barbecue restaurant took root in 2016, and his wife, Boo Eaker, soon jumped in to join the journey. In 2018 they launched as a food truck in Houston, serving at high-profile spots including NRG Stadium for Texans games, Karbach Brewing, and many more. When COVID hit in 2020, like so many businesses, they faced a major setback and had to pivot. In 2021 they took another leap of faith, relocating to Fredericksburg to open their brick-and-mortar location. Today, Eaker Barbecue is a craft barbecue restaurant that honors traditional Central Texas barbecue while Boo infuses her Korean heritage into creative sides and specialty meats—blending bold Texas smoke with vibrant Korean flavors.
